Our contemporary cuisine emphasizes on refinement and quality and we want our work to have a substantial and positive contribution. Not just to our clients and their businesses, but also to the customers and communities they serve.
With our cooking philosophy we hope to give people an experience with new flavors, new designs but also something really positive for the soul and body.
We support a cooking philosophy with an environmental responsibility by using ecological products and respecting sustainability.
My Roots’ cuisine draws its inspiration from its fertile nature surroundings with dishes that venerate the plant kingdom. The contemporary cooking style is ‘gastro botanical’ where fruit, vegetables and wild herbs give more prominence on the plate than proteins like fish, meat or seafood.

René Mathieu

René Mathieu is a Belgian chef who started his career in 1986 at Restaurant “Le Capucin Gourmand” (Baillonville, Belgium). There he obtained his first Michelin star.
From 2002 till 2005 he was the Executive Chef of his Royal Highnesses the Grand Duke and the Grand Duchess of Luxembourg.
As from 2005, he has been the Executive Chef of the Restaurants at Château de Bourglinster. His list of awards is impressive and to name a few, he was named Chef of the Year in Luxembourg in 2010 and 2020 and in 2020 he became the Best Vegetable Chef in the World. His restaurant has a Michelin star and a score of 18/20 at Gault & Millau.
He is a gastronomist, poet, herbalist, and a vegetable lover. The food he creates has a high degree of botanical ingredients and is extremely eye-catching beautiful which awarded him in 2019 the 3rd best vegetable chef in the world and a 1st place in 2020.
Cooking remains his escape, his passion, his waking and wonderful dream which never leaves him and always carries him further. The kitchen offers him every day an opportunity of development and sharing with others.
Mario Willems

Mario is a Belgian entrepreneur who has been living in Luxembourg since 1999. His corporate management experience has covered many sectors and he serves on the boards of several international companies.
His real passion has always been cooking. From his youngest years he urged his mother to be part of the cooking at home.
Working for years with several chefs around the world and spending many years learning in an artisanal local bakery made him very skilled in a kitchen.
His travels around the world and interest in local food gave him a very profound understanding and broad knowledge of different cuisines and cooking techniques.
In 2005 he met René Mathieu in the restaurants of the Chateau de Bourglinster and their friendship was sealed.
After many years of cooking together, they both created My Roots in 2018 to share their knowledge and passion to others.
